The new Prineville business is already a big hit with locals who have a sweet tooth and love coffee

RAMONA MCCALLISTER - Pamela Thomas, the in-house baker at Auntie's Coffeehouse and Bakery, makes her baked goods in a kitchen in the back of the business.

On a Thursday morning, a line is already forming at 9 a.m. at Auntie’s Coffeehouse and Bakery.

The aroma of baked goods and coffee entices customers, as they ogle the bakery case filled with lemon bars, delectable cookies, sticky buns and other homemade goodies. Auntie’s, located on 425 North Main Street, officially opened on Friday, Feb. 11.

The bakery and coffee shop offers a wide assortment of coffee drinks — including mochas, lattes and chia — as well as daily specials and specialty drinks. Bakery goods fly out the door as fast as their baker can replenish them.

Pamela Thomas is the in-house baker of the family-owned and operated business, and she smiled as she recalled that her morning begins at approximately 2 a.m. She makes her delicious baked goods in a licensed kitchen in the back of the business, and she paused her busy morning to share her fascinating…
